In the charming Jura small town of Poligny, Xavier Reverchon carries on a tradition that has passed through four generations of his family. It’s not surprising that this wise, good-hearted, and incredibly humble master has had so many students, apprentices and interns throughout his career. Having taught many of the region's best and most famous winemakers during his time as professor of Viticulture and Oenology in Beaune—he represents the old school traditions of the region that are finally starting to regain international notice.
He farms six hectares of vines planted to Savagnin, Chardonnay, Pinot Noir, Poulsard, and Trousseau in the bucolic foothills of the Jura Mountains, at roughly 1300 feet in altitude, where the soils are composed of clay, marl and limestone scree.
Xavier aims to create wines of clean purity, a chiseled precision and a robust richness, thanks to the bright acidity levels, stony minerality and the yeasts indigenous to the Jura. There are only a few winemakers who can achieve this freshness in the region. Some may still follow ancestral methods, but a rare few can master the art of the Jura’s complex aging so well. He achieves this through staunch sustainable and mostly organic farming practices, straightforward, traditional vinifications and extended aging sans ouillage. It only takes an evening sipping on old vintages of his wines to prove how long the quality of his wines truly endures.
